Flourless Chocolate Brownies

Ingredients

  • Nonstick cooking spray or neutral oil for the pan
  • 1/2 cup unsalted butter
  • 1 cup semisweet chocolate chips
  • 2/3 cup granulated sugar
  • 1/2 cup Equal Exchange Organic Baking Cocoa
  • 1/8 tsp fine sea salt
  • 3 large eggs, room temperature
  • 1 cup walnuts, toasted and chopped
  • 1/2 cup chocolate chips (optional)

Recipe

Preheat oven to 325. Line bottom and sides of 8" baking dish with foil and spray with baking spray or coat lightly with oil.

Place butter and chocolate chip in microwave safe bowl and mircrowave at 50% power for one minute, stir and microwave in 30 second increments, stirring after each until butter and chocolate are melted and fully incorporated. Put aside to cool.

Place sugar, cocoa powder and sea salt in large bowl and whisk to combine. Add eggs and whisk mixture until smooth. While whisking slowly pour in chocolate/butter mixture until fully combined. Add walnuts and chocolate chips, if using.

Pour into prepared pan, smooth top and place in oven. Bake 30-35 minutes, until a toothpick inserted in center comes out with a few moist crumbs.

Cool in pan on wire rack. Lift out with foil, peel off foil and cut into squares.
