Curried Sauteed Cauliflower

Ingredients

  • 1/2 head cauliflower, chopped into small pieces
  • 2 Tbsp peanut oil
  • 1 tsp cumin seed (more or less to taste)
  • 1/2 red onion, chopped finely
  • 1 tsp sweet curry
  • 1/2 tsp hot curry
  • salt and pepper to taste
  • 1/4 cup (or to taste) fresh cilantro, chopped
  • 1 fresh lime, quartered

Recipe

Use a large frying pan or skillet which will hold all the cauliflower in a single layer. Preheat the pan for 30 seconds over medium-high heat, then add oil and heat about 1 minute. Add cumin seeds and saute 30 seconds, then add your onion, cauliflower, curry powders, salt and pepper and cook 6-8 minutes, stirring only occasionally so the onion caramelizes and the cauliflower gets slightly browned.

Add most of chopped cilantro and stir, remove from heat and serve. Top with the rest of the cilantro and serve with lime quarters.
