Pasta and Broccoli Salad


  • 1/2 lb penne, fusilli or ziti
  • 2 cups broccoli florets
  • 2 Tbsp olive oil
  • 1/4 cup grated Parmesan or more to taste
  • Lemon
  • Salt and pepper
  • Optional: chunks of feta or dollops of ricotta


Bring large pot of salted water to boul using high heat. Check pasta box to verify the cooking time - generally around 11-13 minutes. Once water is boiling, add pasta and cook for 7 minutes. Add broccoli florets and cook for another 5 minutes. (The broccoli should cook until tender - if your pasta cooking time is different, modify these times accordingly.) Save about 1/2 cup of the pasta/broccoli cooking water. Drain and rinse under cold water to stop the pasta from cooking. Combine your pasta, broccoli, cheese, salt, pepper (lots if you like!), and olive oil. Toss. Add reserved cooking water to make saucy, as desired. Squeeze some lemon over your pasta before eating if you want!

Optional: chunks of feta or dollops of ricotta are really good with this!
