Grilled Beet and Hummus Pita


  • 4-5 large beets
  • 1 tbl olive oil
  • 1/2 tsp salt
  • 2 tsp fresh thyme
  • 1/2 cup hummus
  • 1 cup lettuce
  • 2 pita pockets


1. Heat and prep grill. Wash beets well and carefully slice into a 1/4" thickness.

2. Toss beets with olive oil, salt, and half of the thyme. Lay beets on grill and let cook on each side for 5-7 minutes, checking frequently.

3. Remove from heat and sprinkle with remaining thyme.

4. Line inside of each pita pocket with 2 tablespoons hummus, then layer lettuce and grilled beets inside. Enjoy!
